Who I Am
My name is Fabio Oberto, and I have been producing wines for 20 years.
I have always aimed to create high-quality wines, seeing them not only as symbols of conviviality but also as ambassadors of a world-renowned territory.
Today, I want to introduce you to my new project: bottling the first non-alcoholic wine under the Fabio Oberto brand.
It may seem unusual for a traditional winemaker like me to take on such a complex challenge, but my vision is clear: offering a different product expands the choices available to consumers.

I thought about those moments when, whether out of necessity or a desire for something new, people seek an alternative to traditional alcoholic beverages.
Limiting alcohol consumption can be important in formal settings, for athletes, when driving, during pregnancy, or for those who need to avoid it for health reasons.
After exploring the process of producing dealcoholized wine, I recognized its value as a valid option for those looking to try something different.
Lang%zero retains most of the polyphenols found in grape skins, which have antioxidant properties that help combat cell aging and are considered beneficial for preventing cardiovascular, inflammatory, and neurodegenerative diseases.

Lang%Zero: No Additives, Only Natural Pasteurization
Lang%zero is free from additives and artificial preservatives, unlike many dealcoholized wines on the market.
Through a well-established heat pasteurization process, valued for its natural approach, the integrity of the beverage is preserved while inhibiting the proliferation of potentially harmful microorganisms.

In the Cellar
The vineyard where the grapes are grown is located in Vezza d’Alba, a particularly suitable area.
To achieve an excellent product, it is essential to maximize the wine’s natural potential by working with very low grape yields to enhance sugar concentration. That’s why I start with Chardonnay grapes, which undergo complete alcoholic fermentation, reaching an alcohol content of over 13.5%.
The most common methods for removing alcohol from wine are vacuum distillation and reverse osmosis. We use the latter.
During the process, aromatic and phenolic compounds are filtered through a membrane.
Then, 100% of the alcohol is removed—though alcohol is essential for providing structure, aroma, stability, and body. To compensate, we reintroduce the natural sugars from the grape must to restore the roundness and fullness typical of traditional wine.
Since alcohol also acts as a preservative, we use pasteurization to maintain the integrity of the dealcoholized wine.

How is dealcoholized wine stored?
After opening, you can keep it in the fridge and consume it within a week.
How is dealcoholized wine bottled?
My Lang%Zero is bottled in a 0.75-liter Bordeaux-style bottle with a cork stopper—just like a regular bottle of wine.
Does dealcoholized wine really taste like regular wine?
The taste of dealcoholized wine may differ from traditional wine, as it is influenced by the production process and individual sensory perceptions. A positive aspect of dealcoholization is that phenolic compounds, known for their health benefits, are preserved.
Are grape juice and dealcoholized wine the same thing?
The answer is no!
Grape juice is the pure product obtained from pressing grapes. It does not undergo fermentation, so it contains no alcohol.
Dealcoholized wine retains the complexity of wine. It is produced by fermenting grape juice like traditional wine, generating alcohol (which is then removed), while still developing aromas and complexity.
Even without alcohol, dealcoholized wine preserves many aromatic and flavor characteristics of traditional wine, although it may be slightly less intense.
Can dealcoholized wine be beneficial for health?
Alcohol-free wine is considered a healthy beverage because it retains many of the benefits of grape juice. Grapes are rich in vitamins, minerals, and trace elements and have significant antioxidant potential. Additionally, alcohol-free wine is safer for the liver compared to traditional wine, as alcoholic beverages contain alcohol, a major contributor to liver damage, especially with excessive consumption.
Does dealcoholized wine improve with aging?
No, dealcoholized wine does not age like traditional wine and should be consumed relatively soon.
What dishes pair well with dealcoholized wine?

Can dealcoholized wine be used as a cooking ingredient?
Yes! Dealcoholized wine is great in the kitchen, adding a vinous note to dishes without introducing alcohol. It is perfect for deglazing recipes or enhancing flavors with depth.
Is dealcoholized wine suitable as a base for cocktails?
Dealcoholized wine is becoming a versatile ingredient in mixology, ideal for crafting elegant mocktails. Its sparkling version is increasingly used by bartenders to create innovative alcohol-free cocktails.
Is dealcoholized wine a good alternative for athletes?
For athletes or those who exercise regularly, drinking dealcoholized wine can be an interesting option since alcohol-free beverages do not affect sleep quality, muscle recovery, or nutrient absorption.
Additionally, dealcoholized wine partially retains polyphenols and antioxidants and has a significantly lower calorie count—typically around 1/8 of the calories found in traditional wine.
However, the best choice depends on individual nutritional needs, the type of sport practiced, and the frequency of consumption.

What about those who avoid alcohol for religious or cultural reasons?
Non-alcoholic wines offer a great choice for those who want to enjoy the taste of wine while respecting their religious beliefs. The increasing availability of these options is widely welcomed and is growing rapidly in popularity.
How does the hot pasteurization process work?
First, water is heated to 60°C in a large tank. A basket containing bottles is then submerged into the tank.
By keeping the water in constant motion with a recirculation pump, the temperature is maintained at 60°C. Once stabilized, the next phase begins: ensuring the bottles also reach 60°C for sparkling wines or 65°C for still wines before cooling.
This step is crucial to completely eliminate yeasts and bacteria, preventing any potential refermentation. The bottles take approximately 30 minutes to reach the desired temperature.
Once at 60°C, the bottles remain in the water bath for an additional 30 minutes. After this, they rest for a couple of hours, allowing them to gradually cool to room temperature in a natural way.
